There are fabulous shows to see, wonderful shopping, great restaurants and loads of other attractions in and around the Las Vegas area.
Go to www.vegas.com. It lists shows and attractions among other things, it should give you some ideas.

Drink, go to some great restaurants, see the attractions, go for some spa treatments, go shopping at regular or outlet malls, go to shows, there are some rides available, rent a car for at least one day and get off the strip and see some spectacular scenery-Valley of Fire, Red Rock Canyon, Mt. Charleston, take a paddle boat cruise on Lake Mead, visit downtown for a different atmosphere, drop in on some lounges to hear some great music for the price of a drink or two,go dancing, go to clubs- you name it and it is available in Vegas! Just popping in and out of the casinos/hotel looking at the lobbies, attractions, etc. would take a good bit of time.
People watch.
If you took the gaming away from this city you would still have more to do and see then most major tourist destinations.
